The past couple of days I have been craving starchy things. We don’t have any bread, and the wind is convincing me not to try to walk to the bakery, so this morning I made gnocchi. Gnocchi is great fun to make. I got the recipe from my friend Becky and her cousin Heather, who took some great pictures of their end result. Here’s the recipe in short:
2 large potatoes, cooked and fluffed
1 egg, lightly beaten
1 cup of flour
Egg the potatoes, and sprinkle on 1/2 to 3/4 cup of the flour. Mix gently with your hands until it makes a dough. Roll into snakes and cut into pieces. Put in boiling water. The gnocchi will rise to the top when cooked.

Yay! I’m so glad you’re going to make them! You know what I would suggest, though, after tasting the end result? Either add a pinch of salt to the gnocchi themselves, or make sure your sauce really packs a punch. They can be a bit bland otherwise.

when you say cooked, are they baked or boiled?

Good question! I boiled mine whole and then peeled them. Then I ran a fork down the side of each potato over and over until I had a big pile of fluffy potatoey goodness. My gnocchi turned out just fine.
I’ve heard, though, that they turn out better if you bake the potatoes- dries them out more, and makes it so you add less flour to the dough.
Let me know if you try baking them. I think I might try that next time.
